I think that eventually the plant gets kind of bunched up under there...plus insects get under there that they can't get so you lift the frame for bit and let the chicks clean it up.

Yes, aart--that's exactly right. The "lawn grass" will go dormant soon, so replacing that with winter wheat/rye will give them stuff to munch on thru early winter and maybe all the way through the winter depending on how bad (good?) the weather is.
