Selling chicken eggs

Glad to find this thread as I'm gearing up to greatly increase egg production next fall and want to start selling them. We live in Kansas so I'm thinking about $4 per dozen.

I really want to have the birds so that a dozen eggs will have everything from white to dark brown eggs in it. Is it worth the trouble? I know to make money selling eggs you need huge production. Is the rainbow dozen a powerful draw or do you think getting a bunch of heavy brown egg layers is just as good?
Brown eggs will sell just fine! I will say customers seem to be willing to shell out more cash (pun intended) for the 'pretty colors.' It's also a conversation starter because so many people have no clue there are blue and green egg layers. I sell mine in a clear carton to show off the variety.

Price at Walmart is 10.47 for 12 organic eggs. That is 87 cents an egg.
I charge $4.00 for 8 eggs. That’s 50 cents an egg. I find that people rather buy local and fresh anyway.

My customers tell me they don't care about color, and they are men. When their wives are with them though, they oooh and aaah over all the pretty colors! I have four coops, each with a different genetic egg color rooster. I have a total of around 45 birds at the moment. I have dark brown, light brown, speckled, green (olive), blue and everything in between. I love to hatch my own chicks. It's a lot of birds but for me it's fun and interesting.

I charge different prices for different people. My coworkers only pay $3/dozen; people I don't know pay $4.50/dozen and $6/18 count. I keep an eye on current prices so I know when the market fluctuates. Make sure you are charging enough! Don't undercut yourself thinking that's an incentive to buy. People won't buy if they think the price is too low because it might mean they're buying an inferior product. I have people come from as far as 40 minutes away for my eggs. And some of these people are seriously wealthy. I am always amazed by that! But I am happy to sell to anyone who wants them.
