Semiboneless?

I didn't really want to wrap with bacon. I want to taste the quail and bacon can be overpowering. I ended up scalding for several seconds in 150 degree water. Then dunked in ice water. I found that I had to rescald some of them after I got about half the feathers off. Hotter water seemed to work better.

I haven't butterflied yet. I think I'll brine first and butterfly before grilling. I've had enough of butchering for one day.

Here's the result. The little guy is one of the A&M's and the big one is a Pharaoh (I had too many boys). You can definitely see why I'm only keeping the pharaohs.
