DE just creates respiratory disorder in chickens if you put that in your coop. Seven is a insecticide, chemical compound not designed for indoor use. Use your judgment on this.

Just starting off so I don't have rats or mice yet but I'm sure they will come. How do I keep them away?

Diotomaeceous earth is not safe. It is a respiratory irritant for you and your birds, especially them, it with cause necrotic tissue in their lungs and suffocate them.
It stops working if it's remotely damp like it will be in the litter.

Traps, no waste feeders, covering holes and vents with hardware cloth. Etc.
