Yes, your Polish is a cockerel...

Polishes are notoriously hard to sex. You'll see things along the way that makes you think it's a pullet, then bam it crows! Over the years, it has been pretty easy to see from their hats, starting at around 6 weeks. I was taking some pics today and got a great one of my 6 week olds, and I thought it may help.
The nearest is a Cockerel, and the back is a pullet. If you look at the hat, you'll see the feathers beginning to stick straight up on the cockerel near the front and sit down on the pullet. prior to this, the cockerels hat would always sit down (like the back of its head in this pic) and present as a pullet.
Mind you, the waddles on this Cockerel are large, and would typically be an easy give away. He also has very prominent saddles - so no real mystery here.
