She has been acting very different.

My favorite hen, Daisy has been acting very different lately and I’m very worried.
She Loves food but she isn’t eating,
I feed my flock of 12 every morning enough for the food to last them through the day.
She is drinking water, or from what I have seen.
I am very concerned for her and I don’t want anything to happen, although it may be her time because she is 7 1/2 years old.
Her laying has been weird as well she has been off and on with laying eggs and I always think when she takes a break she may be egg bound because her eggs are very big as well
She is a mystery breed
And I will show a pic of her poop that I found and hopefully that helps

Something's definitely off. Check her crop first thing in the morning to rule out a crop disorder. It should be empty after sleeping all night.

Another possibility is a ruptured or stuck egg. Being older and also going into molt season, egg quality diminishes, and the possibility of egg related issues can increase.

Tonight, I suggest giving her a calcium tablet (people calcium supplement or Tums) to get a head start on a possible reproductive problem. Then report back here with the result of your crop exam in the morning, and we'll go from there.

Thank you, sadly I don’t have a calcium tablet but I have been checking her crop each morning since I have noticed this. I did just take her aside and gave her some electrolytes and probiotics in her water and I will check on her in the morning.
