My husband discovered the smoker and now he smokes EVERYTHING. We cooked our Thanksgiving turkey last year in a smoker. It was actually pretty good.

We would have killed each other without them. This post is a perfect example. I said "We should start a thread. You should start it because you could introduce it better"That is so wonderful to hear. You know I got the idea for this thread because SC and I always ended up on the same thread and almost always had opposing view points not to mention opposite end of the line bators. I took the suggestion of doing a thread together to share our differences to him and he agreed to participate. Sure I could have started a differences thread without him, but I think we all know it would be a totally different animal w/o his (sometime annoying) personality. And w/o you guys having came and stuck around, we'd just be arguing with ourselfs and probably wouldn't even be speaking at this point. lol So thank you for the thanks, but it's all of us together that make this what I think is an awesome thread.

You two are great, it's like watching siblings fight over the video game chair!

A smoker is on my wish list.My husband discovered the smoker and now he smokes EVERYTHING. We cooked our Thanksgiving turkey last year in a smoker. It was actually pretty good.
Good luck SC! My thermostat has been all over the place. We have had to watch it like a hawk. I have a new TSC1000 coming today. If I don't electrocute myself setting it up we should be in business. My eggs were 75 degrees on one occasion and 80 on another. Frustrating.Ok, been busy this morning. Didn't have time to give you guys the lockdown stats. Amy, go ahead and put the floats in storage until the spring...
The good news is, only 1 clear out of 24. The bad news is air cells are all over the place. I have 16 of the huge, dark Davis eggs that all have developed, but I can't tell to what stage. The air cells are about 2/3 of what I normally expect to see at this point, so I'm afraid I'm going to have a bunch of chicks that develop and never pip. I hope I'm wrong, and always hope for the best, but the air cells are small. Almost completely round and even with the top of the egg, not drawn down. I've incubated at 28-30%, and I refuse to go lower. I may have to try sanding eggs at some point, but it shouldn't be that hard. I may go the totally opposite direction and follow the article Ruby posted. Incubate at 55% and hope that the humid air will pull the moisture out of the egg through osmosis![]()
The lighter, young hen eggs look like the air cells are too large. Good development on the chicks, but I'm hoping they aren't sticky chicks, or get shrink wrapped. This will be a good experiment to see which ones hatch and which ones don't, but I don't think I will get anywhere near 75% of 23. If I were judging by air cells only, I would say 8 or 9. I may be pleasantly surprised, but all I can do now is wait and![]()
I read that first part the wrong way. Twice.A smoker is on my wish list.I cook my turkey in a dutch oven, and it is pretty good that way, but smoked turkey is so good.
yeah, it was pretty good. At first I was like I don't want smoked turkey for thanksgiving but we didn't have much of a choice cause at the time we were living on a boat and the darn thing wouldnt fit in the toaster oven, lol. When you think of thanksgiving turkey, you generally think roasted, not smoked, but it was really good. Very moist, not dry like it can sometimes be when roasted.A smoker is on my wish list.I cook my turkey in a dutch oven, and it is pretty good that way, but smoked turkey is so good.
