I'm a bleeding heart. I can't eat something I raise and I can just barely get rid of the roos, knowing where they are gonna end up. lol I'm one of those try to save them all weaklings. I don't do fresh game no matter who kills it and eggs are about the only thing I do farm fresh of the animal related category. I'm not opposed to hunting and raising your food- just not for me. I already know that if I were lost in the wilderness and there were no fruit trees or edible vegetation, I'm a goner...lol

Just keep breeding your largest hen to your largest roo. Continue to weigh eggs, hens and roos, all offspring. Keep notes on each bird, band them if you have to. I did this with my Bobs. I had huge birds when I was done. I also bred for tameness as well since Bobs are horriblely high strung. My Bobs got so tame, some of them got on my lap! 

I am getting over 12G eggs from my original birds

I cant wait to see where I go from there

It is fun to watch them evolve. I had a breeding program going for nearly 10 years. It takes a while to see changes. You will enjoy it!!

Cool...you hatch quail? I used to hatch tons of Bobwhites. Had 3 huge aviaries full of Bobs. I have a couple of geriatric 7 year old males left now, that is it. LOL

Start with Coturnix quail first. Bobs are challenging to raise if you have never kept them before, they are so wild.
