Shelving under roosting bars

I used plywood for under roosting bars with food bags over them but now the wood is getting warped. I’m looking for advice on what to use

You need to build and mount a frame with lower supports to which you attach the plywood. Then caulk the corners and either paint the board with a couple of coats of good quality exterior paint or apply a sheet of vinyl flooring to it.

I'm assuming this is a poop board -- is it no longer functioning now that the board warped? Pics of the problem?
I have brackets on both sides should I use thicker wood. I do slide them in and out daily

What kind of wood did you use. And the shelves are supported on both sides

I used recycled 1/2" OSB from the roof of the shed when I converted it into my coop.

You're supporting only the short ends of the plywood. That's not adequate support to prevent it from warping/sagging. You need to support it all the way around the perimeter with one or two cross supports running parallel to the short length depending on how wide the boards are. I don't have that but my boards are only 2 ft wide.
 
Another option involves keeping the wood of the poop boards out of direct contact with the poop. Instead, it would be serving as shelves, but with removable shallow dog crate trays resting on them for the actual poop. To clean, you lift out the trays, dump the poop wherever you usually deposit it, hose off the trays when they get grim, and replace. Shake on a thin layer of sand and/or PDZ (zeolite) if you like, to help release the poop.

Wow, that's beautiful! If I were a chicken in this coop, I would go outside rather than poop in this nice clean coop! Wish now I had painted mine. And love the butterfly! ❤️
