Should I hatch eggs and maybe get overrun with roosters...?

Yeah, I'm a vegetarian, so a no go on eating the extra roos lol. I'm researching hatcheries now for mail order chicks. Any suggestions on a reputable one?

Well there's your answer. Don't raise birds you don't plan on eating.
I have kept several rooster flocks but that is only until I eat them or some become replacements.
Normally, when there are no hens around, they get along with very few squabbles. However, that depends on the breed one keeps.
 
Remember that vent-sexed birds will have a 5-10% error rate, so you can still end up with roosters if you order vent-sexed chicks. It might be better to order sex-linked chicks--although there is still a slight error risk there, too.

I keep multiple roosters. I have a breed known where roosters are more likely to tolerate other roosters, if they have been raised together (Icelandics). Generally, they do spar, but they don't beat each other up. So far they aren't over-breeding my hens, though I only have 4 hens to the 2 boys. But I am hatching lots of eggs so I can improve that ratio (and, frankly, fill the soup pot).

This. If you can't keep roosters, get sexlinks from a reputable hatchery, not a store. Even with a 100% money back guarantee you could easily get boys and be stuck with em.

You may also want to review chick keeping in general if it's not a meat allergy thing. For every hen hatched there is on average a rooster hatched too. All those boys go SOMEwhere. Most aren't very vegetarian friendly.
