I gotta ask, for you experienced breeders, about how much on average should I expect a Kelso or Sweater cock to weigh?
 
The Gamefowl will average from around 4# 6oz. to well over 6#. I am talking Gamefowl not Old English Game.

On average for a Kelso, I'd probably go with Chris' "standard". But if you found one from a breeder that weighs less it is of no importance with American Gamefowl. Different breeders like different things, I personally don't like birds in the four pound range, I like them high-stationed in the low fives to 6 pounds myself. Other breeders though may select for smaller birds, accordingly to their likes.

Sweater's are usually smaller birds in my experience, but I wouldn't think it unlikely to find one in the low fives, or even sixes depending upon the breeder. But usually, smaller birds in my experience.

I know they can vary, just need an idea of size. And, correct me if I'm wrong, but are Butchers often a little bigger? They appear so, but maybe it's just the fuller hackle and tail I see in most.
 
It can be tricky to tell by appearance, as it seems you are figuring out. AGF are "hard feathered" but not as hard as some of the orientals. The hardness varies, and because of this you often don't know if you are seeing "all" bird or "a lot of feathers". 5. to 6. is a real basic range, and really, nothing is "right or wrong" within that range and a bit on either side.
