Highly illegal most places, and most of the meat is ruined by bruising due to the force of impact. You can usually get maybe the shoulders from a deer hit in the hindquarters, or the hindquarters from a deer hit in the forequarters of edible meat - it used to be legal, where I used to live, to field dress and haul the carcass to the Honor Camp in the area, where the inmates would dress it out, salvage what they could, and make use of it. Now laying a hand on the carcass is enough to end you up in jail for six months, if you get caught. All due to people deliberately hitting deer with their vehicle to get a few steaks off the mess that was left.

This is what I've always heard too. The meat's usually ruined from internal damage.
