There won’t be anyone but I will make sure the food and water is near her. Also it’s weird Bc when I go out and be by her she does ok and ears grass with the flock, but when I leave she goes back to the coop.

If chickens came with a manual, this would all be so much easier! We learn as we go. You are attentive to your flock, they will teach you all you need to know over time.

What should I do when i leave for the week for thanksgiving? No one will be there to pick her off the nest. Will she get off by herself to poop,drink, and eat?

You really should just break her now, then you won't have to worry about it later. Aart posted instructions above on how to set up a broody breaker. If done promptly most birds break in 2-3 days... the longer you wait the harder it'll be to break her and it may take more than 3 days.
