Here's a little video I put together of the slaughtering and processing of a quail, which will also be the same process for most other birds, and I thought I'd share it.

Coturnix are definately raised very easy at minimal cost. They reach mature size by 6-8 weeks and only take 17 days to hatch. So while they are smaller, it doesn't take nearly as long to raise them for meat. Chukars and bobwhites are other alternatives which are larger birds, but they take 16 weeks to reach mature size.
