I just made deviled eggs for a bbq. The eggs were really good and everyone loved them. I think I noticed, I say think because I no longer really remember what store-bought eggs look like (ha) that the yolks were smaller from our hens than from the store. Is this possible? The eggs seemed just as big or bigger, but the yolks looked smaller. That being said, the yolks were beautiful and made wonderful filling. The color was wonderful and the texture was fabulous.

Sigh, long post short, do the home layed eggs have smaller (but thicker) yolks than the store bought eggs?

I noticed it too! We had to separate yolks to make a white cake and I froze them. They look so pretty and much taller.
