So I went to a Belgian Supermarket and looked at the capons

When I was young capon was our traditional Sunday dinner. I found capon at the Spanish market about a year ago so they are still available. It was not much different in price than a whole Cornish rock. Goose and duck are available around the holidays as well as rabbit. I am in SW FL.
 
here in Canada, pretty much turkey or pork (ham) but have seen turduckens at a few places. quail and rabbit are hard to find but can be found year round.

but usually just chicken and turkey are to be found. (and there just the cheap industrial breeds/factory farmed raised crap)
 
capons. Yes, castrated roosters. very brief investigation weighed in at 3.6 kilos, and that's without head, feet and internal organs. It was no smaller than the turkeys in the same cooler on the very left.
There are whole turkeys, (only sold fresh, not frozen)ring-necked pheasants, peafowl, quails, ostrich, wild duck, tame duck, squab, wood pigeon, and I think partridge too. Oh and foie gras, no actual goose though as far as I could tell. Though I think you can buy confit of goose and rilettes tinned.

A chicken of that size is almost unheard of in my area, but we do not see capons in stores locally at least not the regular supermarket, one might find it in an ethnic store, but that's not likely. in fact labeling the breed of chicken is unheard of. but that is because the regional chicken processors have their own genetically engineered (not via lab but by breeding) chickens that are patented dna animals. Ducks and geese are somewhat common (tame more than likely) geese are likely ordered in by special order, unless it's it's a specialty meat market. Ducks are in regular stores. Ostrich and quail are available from breeders or specialty shops or breeders. frogs legs and escargot at seafood counters in larger stores ground buffalo, elk and moose at local stores sometimes special order, more cuts available again at specialty shops or breeders. I have seen alligator tail a couple of times. frozen turkey is more easily found here but fresh is available in larger stores. pork and most seafood is available.
