My Dh is diabetic controlled with meds and diet. I have tried to help him with dieting (he and I are overweight) and controlling the highs and lows each day. So a couple of days ago I made a crab salad - imitation crab, celery, onion, etc. Dressing of low cal mayo and some spicy sauce. Tasted great on a roll up or just in a bowl.

Today I reminded the family that there were leftovers in the fridge and DH asked me if there was anything in there sugar wise that could have spiked his blood sugar. I said no!

Then I decided to go check = DANG IT! The imitation crab meat is full of carbs and sugar!

I thought I was fixing an easy, no cook, healthy meal and it was NOT!

This was very upsetting to me. I am trying to make the right diet changes and then get hit by a processed, lower cost alternative!

Not only that, a dear friend with celiac disease needs to know no to even try this because there is wheat flour in it - who would even suspect that!

Sucks, but you have to read labels on processed foods.

Supposedly "healthy" things often turn out to have a lot of sodium, sugars or other crap in them.

The closer you can stay to unprocessed the better.

My Mom & Dad & both grandmothers were diabetic.
Mom taught me that even fruit can be bad - grapes are ridiculously high in sugar & raisins are worse because drying concentrates the sugars.
 
I really do know that, but "imitation crab" ... they caught me there. Made from fish>>>surami<<<< dang! did not expect protein to be less than 25% and carbs and sugar to be more +++++

Yes read the label, but couldnt they help more?

Another thing that may or may not be of value to you is that if you want to eat the occasional watermelon or grape go for the seeded variety - and eat the seeds. Provided you use moderation it really helps the blood sugar from spiking too high and too quickly.
