I am always, always incredibly busy during the week, have been working insane hours. So I confine all my cooking to the weekend, normally on Sunday evening. I make casseroles and stuff to put in Tupperware boxes and defrost during the week. This thread is oh so helpful when I am planning what to make for the week after I've run through all my usual cookbook stuff--DH was about to go on hunger strike if he ever saw another quiche.
