Can't eggs be saved or stored for a few days before starting? I read that somewhere.... If that is the case, let them sit over the weekend and start them when you get home.

If laid today it would be 11 days of sitting.
Some eggs may be 15 - 18 days
Is that ok?

I caught the flu during week # 2 on my last hatch. I turned them 2 times in 3 days. Everything came out well.

I would not miss a vacation because of it. Go and have fun.
