Out of our 6 hens, 4 are laying eggs and have been for about a week or two now. However, one of them lays an occasional egg that has a soft shell. Is this normal?

This is extremely normal for newly laying hens. It is just a sign that their reproductive system is getting started. Some lay soft shell eggs, rubber shells, double yolkers, no yolkers and others no shell at all. This might go on for a few more weeks, but make sure you are feeding them oyster shell and they are getting plenty of calcium. I wouldn't worry. Good luck and I hope this helps :)

This is really helpful information. I was wondering about the double yolk eggs as well. Thank you!
