I have a golden laced Wyandotte that lay an egg today in middle of no where and when I touch it, it broke I tried giving her more calcium but I only have oyster shells that are hard to mix in with their other food

Eggs without shells generally has nothing to do with calcium intake. Generally eggs are pushed out before they are fully formed. Usually from stress.

It had a shell just very delicate
It may have been from stress although she at the top of the pecking order with one other hen, a rooster and 4 poulets

Thin shells can be from things like panting or a slight respiratory problem. Shells can get more brittle as hens continue to lay. Using things like ACV can cause brittle shells as well, especially in warmer weather.

Hopefully it's just a fluke. All you can do is offer those oyster shells. They will consume them as necessary. Calcium is generally pulled from the bones where it's stored until needed.

I think she push out the egg to fast because she's been laying many eggs in a row for some reason this week

Should not be mixed with feed anyway...put them in a separate small feeder.
What is her regular feed?
How old is she ....and how long has she been laying??

I offer free choice oyster shells
Their main feed is a all flock whole grain that gets fed twice a day
