Poultry Processors
There is only one packing plant in Kansas that will
custom-process small flocks of companies under state
inspection. If you have or will have birds to process,
you should contact them well in advance to make reservations
to have your birds processed. Other plants
may process poultry, however, since they are not state
inspected, this processing is done on a custom basis.

Just because a poultry processing facility is not USDA inspected does not mean that your can't use them. There are several exceptions the USDA has depending on the intended final consumer, and the source of the poultry.
usda guide Poultry_Slaughter_Exemption_0406.pdf list the criteria for USDA inspection. Many states have there own critria so you need to check your local AG resources
