Breakfast Casserole

1 package (12 oz) breakfast sausage links
6 English muffins, cut into 1-inch cubes
1/4 cup butter, melted
1 cup shredded cheddar cheese
1 cup shredded mozz cheese
1/2 cup chopped onion
1/2 cup chopped red bell pepper
12 eggs
2 cups milk
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup bacon bits (i'd use real bacon..

Cook sausage fully. Cool slightly; cut into 1/4-in slices. Place English muffin cubes in a greased 9x13 baking dish;drizzle with butter. Layer with sausage,cheese, onion and red pepper. In a large bowl, combine the eggs, milk, salt and pepper (and i'd even use some hot sauce..) Pour over cheese. Sprinkle with bacon. Cover and refrigerate overnight.

Remove from the refrigerator 30 minutes before baking. Uncover and bake at 350 degrees for 45-50 minutes or until a knife inserted into the center comes out clean. Let stand for 5 minutes. Serves 12..(yeah right..

I make French Toast Casserole too. . .cut up a loaf of french bread, or your own homemade, pour beaten eggs, milk, sugar, cinnamon . . .let set overnight. I make mine kind of soupy . . .it soaks it up alot. Bake at 350 for about 45-50 min, or until a knife inserted comes out clean . . .serve with syrup . . .yummmmmmm and it goes great with the other breakfast casserole. (If you eat those calories in the am, you have all day to work it off!!! My story, and I am stickin' to it!!)
 
Take some cooked rice, mix in things you like... (diced mushrooms, green onions, peppers, chopped (cooked) bacon, sausage) what ever you like.

Mix up enough eggs to saturate the mixture. Add the egg into the rice/veggie mixture. Should be pretty wet. Spoon into muffin cups and bake on 325 for about 20 minutes.

Now you have little finger quiches. Very yummy. They freeze well and microwave nicely. Great for breakfast in a hurry or a snack at work.
