**Sort of poll** How do YOU process your birds?

We raise a lot of cornish x so we have a mobile processing unit. We put them in cones and with a VERY sharp knife, cut off the head as fast as we possibly can. We hold them down with one hand for a few seconds so they don't flop out. We have 6 cones in a row so by the time we're done with #6, the first one has bled out and then we load them into a scalder and then the plucker.
I realize that most people don't raise enough birds to justify processing equipment but you can make a lot of it yourself. You could use road cones and cut them to fit. Use a turkey fryer for your scalder and make a plucker.
We compost everything left over. We layer it with old bedding (wood shavings) from the brooder or saw dust. If you have enough carbonaceous material, it wont smell and if it does, just add more. We process a few hundred a month and ours never smells.
