The sand dehydrates it and the rain washed it away. Plus the birds can turn it over themselves. I have a completely poop free run in the winter - really! It totally disappears. Now, I only have half the chickens you do, and summer is a whole other story without all the rain, but that goes for whatever you put down without the rains to wash it away. I use a garden rake inside the covered run and it filters the poop out of there in about one minute. In the uncovered area, I do nothing. I have a combo of bark chips and sand...Here's a visual...
I've also tried bags of ponderosa pine needles, but they get dirtier than the sand. It does help create a "netting" over the mud if you get enough and they love to spread it around. The sand is so much better though.
