Hello Everyone! Short story of how this recipe came to be. Several years ago I was at my friends lake house for a girls weekend of fun in the sun and we all decided to cook a southern dinner that night. They all seem to enjoy my southern cooking and ask me to cook certain things for them. This day one friend wanted fried okra, another squash and another potatoes (yeap - all fried). We go to Kroger get the goods (too bad we didn't have our own garden) but got back started preparing and get it going only to discover we didn't have enough frying pans to do all three. Without giving up on the idea I decided heck let's do three in one. So I chopped up okra, squash and potatoes put in ziplock bag added salt & pepper, coating all three really well with cornmeal and about a tbls. flour. Of course get your oil really hot and put all in skillet and make sure not to turn until veggies start to get golden brown.
Since then I've added different veggies like green tomatoes, zuchinni, onions and remember to slice about the same size and shape.
To this day about ten years later they still want me to make this dish for them and they simply say "Veggie Medley" and we know what it mean. WOW! Thank God for friends!
