As far as popular breeds go, that will depend on your local market. Some locations people seem to want the latest fad, expensive breed and in other locations people just want the tried and true good layers. Of course you should take your personal preferences in chickens into account too. No sense raising birds you don't like.
You may want to check out Henderson's Chicken Chart for starters. It doesn't have every breed but a lot of the more common ones are there. It has laying ability, egg color, temperament, varieties, and if available the author's experience with the breed.

If you are interested in creating your own sex linked chicks read the first post in this thread. It describes how to make red and black sex links as well as feather sexable chicks. This is a possibility if you live in an area where many cannot have roosters, and buyers are looking for pullets only. You would have to have a plan for all those cockerel chicks though.
