Most definitely can! I slaughter them myself each year. We take care of all the fish, deer, squirrel, rabbit, hogs, and coon each year too. We dont buy meat in stores... way too country for that! Heck you process venison right...get all the blood out before you freeze it, and NO ONE can tell between venison and cow meat except for the lack of fat.
Anyway, I hang a thin rope from the middle wrung of a ladder tied like a noose, place my cutting board on a table by the ladder. Then hold the chicken for a while, let it relax while I put the noose around it's feet. Gently and slowly tighten it, they never notice. Loving on them, scratching behind it's ear, I use a very sharp knife to cut the jugular on their neck real gently, and lay them on the cutting board with their head down, still loving on them and remaining calm. They simply close their eyes as the blood slowly leaks out. Takes longer than some people may do it, but I like knowing I am being loving and gentle and not causing them fear and panic before the end. I haven't had one panic or squawk or flail around yet... peaceful. Once they are gone, I extract the head and let them hang from the ladder rope upside down until the blood has drained out... which there isn't much.
Then process them. Hope I don't get too many people griping I posted this!
