Just for their feathers? Most falconers generally hunt for the meat, as the feathers are ruined after the hawk/falcon/buzzard is done with it. The meat doesn't go to waste either; either the falconer eats it, or the bird whom caught it does.

Oh no no no no no! The sport of falconry is the use of a bird of prey to hunt. It's been done for centuries! Now with smaller birds of prey, such as Kestrels, Sparrow Hawks, and Merlins, the small birds and mammals caught are only for sport to exercise the bird and to feed it. However, those who use larger birds such as buzzards, accipiters, and larger falcons like Gyrfalcons and Gyr/Peregrine mixes, will eat the fowl and prey such as rabbits that their birds catch.
