steps for having hens hatch chicks

I have a flock of about 30 hens. My roosters are actually seperate as I want to do more selective breeding. could someone list the steps of having the hens hatch out chicks once they have been mated with the roosters. I'm kind of naive about wether i just let them lay and then candle all the eggs a few days after laying or do I pull all the eggs and store them then wait to see which ones are fertile in a few days and place them back under the hens? thank you so much for any information you can provide.
