Storing grown potatoes from the garden?

Short Story...
In 1978 my first views of The County (Aroostook Co, ME) made me feel sorry for those poor people! I grew up impoverished in SE Arkansas and after seeing their houses, I felt rich!
It took a couple of weeks living there to realize what I thought were houses were actually potato houses. The above ground wooden structure looked like the top of a barn with one chimney. This was on top of a huge mound.
A couple from church bought a home which had been a tater farmer's. The basement was a vast underground space where he'd wintered his potatoes right under this beautiful home. You'd never known to look at the elegant home's presentation.
I tried to find a photo, but they seemed to be more from the modern era.
 
If you store them outside, do you need the potatoes to be ... a certain number of inches below dirt? Any idea how thick you want that for the minimum amount to help against freezing?

Yes, unless you mound soil up around to make a root cellar above ground or partially above ground. The distance down or thickness of the dirt over the root cellar wall depends on the frost line of your area.
Here, it is 3'.

That is for the simple way. There are more complicated ways that need less depth of soil.

Thank you very much! That's cool. I think other people will be more interested in this idea also. It could affect a lot of things.
