Stove top eggs

This is as easy as they come.

First, in skillet, add a little olive oil then you fry up crumbled sausage or whatever meat you like. We use whatever we have on hand, may be breakfast meats or lunch meats. Toss in whatever veggies you like. Cook til tender. Lower heat... We use fresh spinach often. Next take about 6-8 eggs, depends on size of pan used(trial and error), whisk the eggs then pour over the pan ingredients. Add whatever cheeses you want to. We have used anything from cheddar to feta and even a mix of several. Place a lid on pan and cook til done and fluffy(about 15 min +/-). Slice into sections and enjoy!

I do this alot but mix it all together like scrambled eggs with all the other in there.....I even put potatoes. Sometimes we have it for dinner too.
 
Try this.... preheat all the goods going into the eggs. Mix the eggs with some milk. Add butter and EVOO to the pan and preheat. Turn the pan down to med low and slowly scramble your eggs until just set (should look like they're wet but not jiggley). Be sure you're cooking the eggs without browning them. They'll be really creamy and super yummy! I made this for breakfast with onions, tomatoes, mozzarella, basil.... really it doesn't even need that when you slow cook it.
