Stracciatella - soup with chicken & egg & spinach

Disclaimer-this isn't *my* recipe but one I found this week when I was trying to find something quick for supper that used both spinach & eggs. I hope it is okay to post the link here. I added diced tomatoes for color & used a veggie stock instead of chicken b/c it is what I had on hand-my kids loved it. The texture is a bit different, not like egg drop soup at all, but the taste was quite good-full for being such a fast dish.

I thought some BYCers might like a new recipe using chicken & eggs.

(I happened to have two lone chicken tenderloin strips in the freezer, so that was the only actual chicken I used in this recipe. I think it would be fine even if the chicken was omitted)
