One of my chickens' eggs have very yellow albumin and the yolk is very thick and doesn't hold a 'yolk shape'. Don't know how to explain it other than maybe there is no membrane surrounding the yolk. What could be causing this? And are these eggs safe to eat?

Welcome to BYC!
Or that membrane is 'weak'.
Some birds just have malfunctioning 'egg factories'.
If it's only one bird out of your flock, it's the bird and not the diet.

They are safe....just no good for 'dippy' eggs.

Tell us more about your flock.
Ages of birds...what and how exactly you are feeding.

Thanks! My 4 girls are about 16 months old. They are loose in the yard most days and I feed them lay mash crumbles with a supplement of a little oyster shell.

I'm finding them a little problematic, they are all losing their tail feathers and one is molting. We live in Oregon. When I was in California I never had a problem with my hens. Is it just trickier in a wet, colder climate?

At 16 months of age and this time of year, molting is perfectly normal...loosing tail feathers is part of the molt. The funky egg could also be part of ramping down production to molt.
