I never went smelt dipping. People use to dip for herring.  The river herring stock was depleated so herring dipping is illegal now.
Crappie makes a fine meal.  They are fun to catch too.
Locally we've caught catfish, large and small mouth bass, crappie, lots of pan fish, bream and robins.
We also fished coastal waters.  My favorite spot to fish is in brackish water.  Head inland it gets fresher, head out it get saltier.  There we have caught flounder, trout, croakers, spots and red drum sometimes rock fish(striped bass).  Red drum are a blast to catch!  They take the bait and run.  It can take some time and effort to land them.  Love it!
We have caught small sturgeon in nets we pulled for shrimping.  They are also protected here so we throw those back.
I think my favorite to eat is crappie, flounder and rock fish. 
I've seen carp in the rivers too.  Also have jumping mullet.  Hubby was almost hit in the head by a mullet.  He didn't think it was funny as I almost fell out of the boat laughing at him! He just wiped the fish slime off the side of his head. 
When the fish don't bite, I enjoy just being there. You never know what you will see.
