If he settles in one spot at night, you might be able to catch him then. Chickens don't see well in the dark. Gently putting a towel over him will freak him out, but he would be easier to pick up and put somewhere safe.

A headlamp with a red light would help too. They don't see red as well as we do.

This is great advice too! I will just point out (in my experience) that if the rooster is actually scared of you, and not just stubborn, you really only have one shot to grab him before he becomes much harder to catch.

Obviously weigh all your options, but coming from someone who is not skilled at sneaking up on sleeping roosters, a calm, slow chase without trying to grab him can be easier.

The red light part is definitely true, it doesn't wake them up as much and you can still see.
