Strong Tasting Chicken? I found out why!

I can the chicken w/ the pressure cooker. It makes it very tender and tasty because initially I boil them w/ carrots, onion and celery. I use the stock to fill in the jars and process. YUM! It is so handy to have ready to eat/cook chicken on the spur of the moment.

Now I understand why my grandmother has told me that before they would butcher chickens when she was younger, they would always put the chickens in an isolation type pen for a few weeks to "clean" them out. I guess she was referring to controlling their diet by feeding grain after they have been free ranging. Now it is all making sense.

Well, dinner's over and boy am I full! The pressure cooker did a GREAT job! I cooked it for 30 minutes at 15 lbs. of pressure. When it cooled, the meat just fell off the bones! The dark meat was really dark and all of it was really tender. I made chicken and dumplings as planned. Yummo! And no gamey taste. I've never had a turkey or chicken that was bad tasting, but I'm guessing it's their diet. Now I'm ready to go turkey hunting!
