Stuffed peppers WITHOUT rice

Does anyone have a good recipe without rice? Ken hates rice.

You could just sub pasta for rice. Wouldn't that work?

Just use chopped cauliflower instead of rice. Us low-carbers do that all the time.

I stuff my zucchini with a mixture of chopped mushrooms, onions, garlic, parm cheese and bread crumbs. It should work with with peppers too.

So I take it, that putting goat cheese on top of them isn't going to work well either.

I like to cook the peppers for about 25 minutes, that way they are hot but the pepper isn't cooked to mush like my mother makes them. What about (that is a bacteria) or beans? I am working out how spell it.

Well that was painful I meant couscous or orzo. Both of which are pastas.
