Stuffed peppers WITHOUT rice

Just bugged, I knew that.

I am pretty resourceful cook, but I don't like stuffed peppers so I rarely make them. What I wound up doing was browning the meat with onion and garlic, crushed red pepper, three cheese spaghetti sauce and cheddar cheese. I used a little bit of curly pasta (tri-colored). I have to go with what is in the house. I will now make sure I have cous cous on hand in the future. I usually have SOMETHING on hand. Not tonight!

I have them in at 400 for 20 minutes.... Stuffed already.
 
That's good that you can translate. I didn't like stuffed peppers until I came up with not overcooking the peppers. Hot but still crunchy. I make them every once in while now. I like brown long grain rice in them. I think it has more flavor, and of course better for us. I like to think of recipes as suggestions. I now have a recipe for potato salad that I actually like. This was another thing that my mother wasn't really good at making. I got the recipe off the back of a mayo jar. What I make no longer resembles that recipe on the back of the box.

There is a pasta called "Orzo" looks like rice but is pasta (here is link to what it looks like) . We make an Orzo salad out of it - just like making Macaroni but use Orzo instead. I also make it like rice for Risotto - great sub for someone who doesn't like rice but will eat pasta.

Your peppers sounded really good the way you did them in the end.

I've had gastric bypass surgery and cannot eat rice anymore. Quinoa is a wonderful high-protein substitute.
