Stupid Corn

No darn it.....we had to actually buy corn to can as the squirrels ate EVERY bit of ours....cursed little critters....

I have been up early this morning skinning tomatoes... my fingers HURT!

I've made 4 Quarts of Salsa and I am half way through what should be 6 Quarts of tomato sauce (I just did 3 Quarts about 2 weeks ago). I've frozen a TON of squash and I REFUSE to can another veggie other then the tomatoes this year.

I have nearly 40 jars of Jams and Jellies from the garden as well.... and I won't have apples or grapes until next year or the year after!

Well somehow I managed to bake 6 Dozen Biscotti today too. Those are for 2 seperate orders.... so I had to hurry the salsa to get the cookies and then have time to get to the sauce, which is still simmering on the stove.

At least my house smells AWESOME!
 
I must add that my kitchen is sparkling clean through all this because I can't STAND a dirt dish in my way while I'm working and I keep 3 seperate sponges out to clean different areas as I go so nother ever gets sticky. Because I will NOT lean on a dirty counter while I'm working.

ps I see you are from Fuquay Varina---------I visited there once on a trip to see my sister who lived in Cary at the time.
