My girlfriends mom was from Laconia New Hampshire and she always kept whoopie pies in the freezer wrapped in wax paper.
Whenever they offered, I was helpless! I had to have one, I think I used to stare at the freezer hoping someone would offer me a whoopie pie!
I'm gonna have to email her about a pumpkin whoopie pie!
She is at least 75 yo and so cool! When we were growing up I thought she was so mean! Funny how we think!

Pumpkin cheesecake update...they were

They were sooooooooo good I can't even tell you!! I made one for my mom and she loved it and she is picky

Pumpkin Bread......baked in coffee cans. That is if you can find metal ones

It's a very moist bread!

3 cups sugar
4 eggs
1 cup oil
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. salt

** mix ingredients above then add...

1 cup pumpkin
2 tsp. baking soda
3 cups flour

Grease & flour 3 (1lb) coffee cans. Fill equally and bake at 350 degrees for 1 hour. Remove from oven and let set for 10 min. Slide out ( I go around edge with butter knife) cool and cut.

You guys have the absolute best recipes. I love this forum. I fix the pumpkin pie recipe on the Libby's label all the time...I even fix it and serve it as a vegetable. And baked pumpkin seeds? Is there anything better???

I need to go get a pumpkin or two this week, I think.

I baked the pumpkin pancakes that The Chicken Lady posted the recipe to again today, except this time I had whipping cream ready and OH MY GOODNESS! Those were sooooo good!

These are my 2 favorite recipes, I make this pumpkin pie every year, it is the best!! And these pumpkin bars make a large sheet pan so it's great to take to work/potluck/large gathering!
