I would have to settle with just using plain old italian sausage here though. I am afraid that moose and caribou are a little scarce here in Virginia.

One large (28oz?) can pumpkin pie filling (not pumpkin puree) prepared according to the directions on the can - mine used 1 5oz can evaporated milk & 2 eggs

Pour the prepared filling into a 9X13 baking pan

Over this pour a box of yellow cake mix

Melt a stick of butter and pour over the cake mix

Top with pecans & coconut

Bake at 350 until set - about 1 hour

Easy and DEEEEEEE-Lishus! : 9

Buffalo is super good also all the game meat is nice and lean. But I would guess a tad spendy if you had to buy it.

It is pricey if you have to buy it and buffalo isn't anywhere to be found here.

Here is my familys favorite and so easy got this recipe from weight watchers

Pumpkin Muffins
1 carrot cake mix or spice cake, I like carrot best
1 15 oz can pumkin (not pie filling)

Thats it mix together it will be thick. Spoon in muffin tin and bake using directions on the cake box
They don't rise as good as some muffins but super moist and yummy

if anyone is doing ww I think they were 3 pts. each if you make 12 muffins
 
Several years ago I made a pumpkin chocolate pie for Thanksgiving. Everyone LOVED it.

Only problem is I lost the recipe and haven't been able to find it again.

Could this be it?

Chocolate Pumpkin Pie

2tbsp flour
1c. sugar
1 tsp cinnamon
1 can pumpkin (16 oz)
1 unbaked pie shell
2 eggs, beaten
1 c. half & half or canned milk
1 tsp vanilla
2/3 c. chocolate chips, melted with 1 tbsp butter

Combine flour, sugar, cinnamon & pumpkin in a medium bowl. Mix well. Add eggs. Stir in half & half and chocolate. Mix thoroughly and pour into pie shell. Bake at 400 degrees for 10 minutes. Reduce heat to 350 and bake about 40 min. longer, until custard tests done. (toothpick comes out dry)
