Pumpkin is my absolute favorite... Around this time of year, we can find pumpkin ice cream in the stores.

The ultimate pumpkin pie filling recipe is found on a can of Libby's brand pumpkin. I have never tasted another pie better than that recipe. I am pretty sure I have a label for it saved around here somewhere. If I do, I will type out the recipe for you guys.

I love pumpkin bread, pumpkin cookies, and pumpkin cheesecake. Here are some good recipes that I've tried:

I didn't have whipping cream on hand so we just ate them with syrup and they are sooooo good!

Made my first of the season pumpkin pie yesterday..it was soooo good..

An amish neighbor gave me some pumpkin dinner rolls several years ago..they were so fabulously moist and tender..unfortunately I didn't get a recipe and they have moved to another area.....anyone ever had these?
 
I love this time of the year!!!! Has anyone noticed a shortage of pumpkin?.... The grocery stores have been out for about 3 months around here. It says on their sign "Due to crop failure, we should have some around Oct."

Anyways.... I love Pumpkin Whoopie pies...and I can't make them due to NO PUMPKIN.. ugh... Also I found a fabulous recipe on Bakerella's site for the most adorable little pumpkin pies... They are soo good.. I love the cream cheese addition..

I posted about the pumpkin shortage a couple weeks ago, but.....

you can buy pie pumpkins instead!

Slice them in half and bake them (with seeds in) cut side down on a lightly oiled cookie sheet for 30-45 minutes or until you can easily poke them with a fork.

Scoop out the seeds (rinse and roast those if you want). Then scoop out pumpkin and mash it.

I like this way much more than boiling or steaming because the flavor doesn't get watered down.

These recipes sound fantastic!

So how else do you process your own pumpkins? Im gonna try baking it as TammyTX said... that has to be easier than cutting and boiling! Thats work! lol
Any other ideas how to make pumpkin puree?
