Get another couple thermometers to calibrate BEFORE you set eggs again.

I separately purchased humidity gauge that you salt test will ease your mind about humidity being too high or too low.
I find that a lot of people run their humidity too high in general.

Although it is important for the successful incubation to have accurate temperature and humidity gauges, during hatch temperature and humidity spikes occur naturally because of chicks'muscle activity (heat) and from the hatched chicks being wet and the wet insides of their empty egg shells both evaporating.

Depending on the kind of incubator, it will regulate on its own after a while, and with those incubators that don't, it is importatn to have the ventilation openings totally open to provide enough oxigen and allow for some of the humidity evaporate.

You are right about the temp spikes.

But in this case I rather suspect it to be due to the shipping. Rough handling during shipping often leads to rupture of the chalaza, so the fertilized eggs will start to develop but die off after a few days.
