Sun Dried Tomatoes

I dried my romas the same way, only with the heat lower and a small sprinkle of sea salt on each one.
After they dried to crispy, I bagged some for quicker use and froze the rest.
Mine we dry enough that I could grind them with a mortar & pestle and add them to all kinds of things, like scrambled eggs (yum!), soupls & pastas. Added flavor without being obvious as tomatoes (picky kids).

I never put mine in oil.
