I have been doing this in the leftover flats for awhile. A mix of potting soil and black kow compost is what I am using right now and it is working great. I have grown all kinds of stuff in these for my girls from a forage mix to leftover garden seed ( lettuce, spinach, oat grass, beets, raddishes, ect..). I have 4 girls and they can decimate a flat in about 45 minutes to include kicking all the soil out of it. They also know what I am bringing to them and meet me at the gate if I have either a flat in my hands or a small bucket I use for boss.
