I have the card of a processor and I am so glad to hear that you did this. Now I know what I would expect. How old can birds get to be before they are processed? If I were to do this it would be for the birds that are no longer laying.

I am not sure on age someone else could answer that better than I could. ( I think) if it's an older bird you would use a different cooking method, the term stewing hen I believe is an old hen you'd cook for soup. Roosters get tough so again make soup. Canned poultry is really tender and delicious if you want to do that.
The roos I had processed were young so I think they'll be tender. I'll find out one day ;) Amy was just over a year but she was mean so she might be tough

I had 12 Buckeyes done yesterday. I am canning most of them. I got too tired last night to do them all so finishing them up today. I put them on ice so I could regenerate. They dressed 4 1/2 to 5 pounds each. NICE looking birds! I knew they would come out nice. They were 5 1/2-6 months, so I don't really want them for roasting. I did put a couple in the freezer whole, but I find canning a better method for me. I will put them in the pressure cooker if I have a purebred like that, they are always tougher and stringier to eat any other way that I would cook them. I love how they come out in the canning though, I get ALL the amazing chickeny flavor and super tender meat. I do them with the bone still on so the flavor comes out of the marrow. I am keeping necks, backs and ribs to use for making stock. I will portion those and freeze them, then when it cools down I will spend a couple of days in fall canning stock. I quit eating gluten a few weeks ago, and it has pushed us to do even more cooking since fast food is really not an option. I have my daughter off gluten too. We both have been having health issues that is should help with. So, with more cooking, especially with our son doing some of it, we are going through more stock than we have in the past, so it will be nice to have it in jars this time around and be able to use it that way. I get tired of digging through the freezer for it and then some people do not label it when they make stock so you can tell if it is vegetable, chicken or turkey.

Back in the time period of this broilers there was different markets for different weights and ages. Fryers were 2 to 3 pounds dress weight and 12 to 14 weeks. Broilers were 3 to 4 pounds dress weight and 15 to 17 weeks. Roasters were 4 to 5 pounds and 18 to 20 weeks of age. After that you had stew hens and roasting roosters. Different ages and different cooking methods. Fryers were often called spring fryers.

@holm25 DUDE!!! You need to start getting those photos ready for next year's fair!!!! If you ever give up on the farming, you definitely would have an option to do something in the photography field! WOW! At one time I had considered being a show cattle photographer, that would be a fun job. That was many years ago though when I was close to your age ;)

That is without the eggplant and cabbage. I will get the cabbage later and I am leaving the egg plant for Ivie to pick. I have no idea which is ripe and which is not. Judy has 2 on the counter here I will try to make lasagna out of. If I can find a recipe.
 
Taking a break . I hooked the box scraper to the tractor . Doing the road in the woods . Really like this compared to a rear blade . Got lots of roots cut and pulled while grading . I will plant some tillage radish and turnips on the edges . Those teeth act like a chisel plow . So it can double as a food plot tool . Wish I had one of these at the lake .

Thanks Minnie! I think my favorite part about those pictured was that there was ZERO editing done. I am really happy how they turned out. I LOVE Animal photography the most! I would love to do the photography for the market auction here but havent asked about it yet. I doubt i will give up on the farm life. I love it and its my passion! I just cant wait to get home!

Let me see if I can remember:

Holm Photos are gorgeous of Duluth. Those orange flowers like to grow up there in the Duluth area. When I went to UMD I had a lawn full of them. I have a few in my lawn here as well. I think they are a weed but sort of bright and pretty nonetheless.

Jerry you said you ate half the cucs. You are a thrifty person...so not sure you ate 1/2 because you liked them or because they just needed not go to waste? LOL.


Ivie: I'm certain it's strep as I've had it numerous times. Hot squishy sore throat, body aches, breath is metallic smell. If it is not strep its a heck of a sinus infection as I do have some drainage. At any rate or either diagnosis this particular case does require antibiotic I've determined. I spray myself with Thieves everyday, Hot brandys with lemon and raw honey. This is a rotten one. I started antibiotic on Tuesday evening.

Ralphie: I'm really missing my garden looking at that harvest. Wow! I need to get my act together and set things up this fall so it's easy for next spring.

All the juvenile birds are sleeping in my lower nest boxes. It is not such a huge deal as I know they'd rather be on the roost and nobody but Dixie is laying. But I'm going to have to do a clean out earlier than I wanted to again. Starting to get strong smelling in the coop again. So soon. 12 birds do add up on the poo piles. They are all turning into gorgeous birds. I'm proud of this crew.
