Okay for all you watching your figures.. (and wallets
) here is a wonderful dish that is great on the waistline (low carbers/southbeachers - great for you!).
instead of refried beans - sweet potatos are used and let me tell you - I ADORE this creation I made better than having refried beans!
This is our dinner tonight and will feed a family of 4 as listed. You can cut it in half if you like. (Sorry for the steamy pic..it was cooking on the stove!)
you will need
2 boneless skinless chicken breasts
1 large videllia onion
2 large green peppers
3 large sweet potatos
1 packet of McCormicks Fajita mix
Black pepper to taste
3 tablespoons of veggie oil (sparingly)
1 pat of butter.
Get oil into pan along with butter, bring to temp. (do not let burn) Cut up chicken into long thin slices - put into pan. Peel sweet potatos and dice up into even cubes. Do the same with the onion and green peppers - place into pan. Cook until chicken is no longer pink (about 15 minutes - chicken is NOT cooked at this point so dont eat anything out of the pan
). Add fajita mix and about 1/4 cup of water into pan - mix all together and let simmer for about 30 minutes over medium to low heat - making sure nothing sticks or burns. Cover with lid occassionally to keep steam in. If it seems like things are getting too dry - add a little bit more water, 1 tsp at a time and coat.
your sweet potatos will thicken everything as they cook - and coat them, but will also still stay together as well.
You can eat this right as is or serve with low-carb tortilla's - or with brown rice as a side dish.
I promise you you wont miss the beans!
