I think we'd collectively be a lot healthier if we ate more (unadulterated) fat and less sugar/carbs. Eat schmaltz in good health!I never learned about rendering the fat from chickens. But my grandmother always had a stash of chicken schmaltz. She used it in mashed potatoes and they tasted like heaven. Also in other cooking and definitely in chicken soup. Our health conscious society would probably turn up their nose at this. But maybe just a tiny bit wouldn't hurt, in an otherwise healthy food diet. I remember the word gribenes but, not what it meant. I have to check out the link myself.
