Talk to me about chicken fat

Do you save it? How? What do you use it for?

Some of the hens we are processing this fall have a lot of fat on them. I hate to throw it away, but I'm not sure what to do with it.

A little on the crazy side.
Chicken fat? hmmm..im not very knowledgeable on these kind of topics, but i know for sure that if you have dogs they would love to gnaw on some chicken fat. Other than that, you could try putting the fat in your stock pot.

I never learned about rendering the fat from chickens. But my grandmother always had a stash of chicken schmaltz. She used it in mashed potatoes and they tasted like heaven. Also in other cooking and definitely in chicken soup. Our health conscious society would probably turn up their nose at this. But maybe just a tiny bit wouldn't hurt, in an otherwise healthy food diet. I remember the word gribenes but, not what it meant. I have to check out the link myself.

I think we'd collectively be a lot healthier if we ate more (unadulterated) fat and less sugar/carbs. Eat schmaltz in good health!

Thanks! I'm thinking about trying to make schmaltz, but not sure how to store it. I wonder if it freezes well.

I saved the fat off the birds I processed today. We are scheduled to do the remaining meat birds next week and then I'm going to try this. Looking forward to seeing how it turns out.

I render the fat when I process a chicken or duck. I keep a small jar in the refrigerator and store the rest in the freezer. It keeps forever in the freezer. I like duck fat better than chicken but use them both mostly when I roast vegetables. Or to cook things like peppers and onions. They add amazing flavor.
