Thanksgiving harvest timing

How long before Thanksgiving do you harvest your turkey for the big day?

I was planning on 3 days prior, and was going to spatchcock and dry brine in the fridge and want to see what those with more experience do. (First time harvesting turkey)

Any recs on cook temp and time also appreciated! Was planning on doing 450 like usual but brining longer and checking temp earlier.

Older birds might benefit from a longer resting time.
